Bali Hai is good simply because its right on/off the strip. I prefer the Dye courses out there and Shadow Creek for is luxury!

Bears Best is amazing. A nostalgic fun play is Las Vegas Country Club

TPC Las Vegas is my favorite. Bit quieter off the strip and the conditions and staff are top notch. The 18th is a bit of a boring finishing hole, but the core of the back 9 from 11-16 have fantastic scenery.
  5. Bali Hai was nice since it was right off the strip and interesting to have airplanes roaring in the air when your about to tee off. but for less $ Bears Best and the Wolf Course at Las Vegas Paiute were my favorites so far. The conditions were absolutely stunning at Las Vegas Pauite.
  6. If you can get on TPC Summerlin is a course I prefer compared to others in the area. (It is near TPC Las Vegas.) TPC Summerlin is the host course for the PGA Tour Tournament in the fall.

There are lots of great restaurants nearby and this course is about 12 minutes west of the main strip.

    Cheers!

Great recommendations up there by everyone.
One that hasn't been mentioned is Rio Seco just south of the strip.
