There are thousands of books and videos, and just as many careers built on answering questions like these. Why ? the answer is simple,,, Golf can be an extremely difficult and frustrating - yet rewarding - game.
When I hit one thin it is mostly due to the fact that I was facing a shot that I did not have full confidence over and as such wanted to take a little peak at the result prior to actually making contact with the ball. (It is only micro seconds).
Try concentrating on actually watching the club hit the ground after it makes contact with the ball. Not watch the club hit the ball, but actually watch the club make contact with the ground after it hits the ball. If you can fool yourself into believing that watching what is going on at the club-head is more important than watching the flight of the ball then you will have less of a tendency to lift your head :)

P.S. If you do find a quick simple fix for your issue - perhaps you could write a book, or make a video :)
